Description
A refreshing salad featuring baby spinach, toasted almonds, and a zesty lemon dressing.
Ingredients

- 1/2 Cup Almonds (Slivered)
- 2 Tablespoons Butter
- 1/4 Cup Brown Sugar (or more)
- 1 teaspoon Cinnamon
- 1 Cup Lemon Juice (use as much fresh as you can)
- 1/2 Cup Oil (canola or vegetable)
- 1/2 Cup Sugar
- 1/4 teaspoon Ginger (ground)
- 1/8 Cup Lemon Zest (2 tablespoons)
- 1 Bunch Spinach (baby, washed)
- Strawberries (sliced)
- 1 Can Mandarin Oranges (drained, or blackberries)
Instructions
- Toast the almonds over medium heat, watching carefully so as to not burn until slightly browning. Make sure you move them around while toasting.
- Add butter, brown sugar, and cinnamon.
- Continue to cook, stirring frequently until brown sugar begins to bubble and stick to the almonds.
- Remove from heat and spread almonds on parchment paper to cool.
- Place the dressing ingredients in a jar and shake to combine or place in a bowl and whisk together.
- Combine the spinach, berries, and oranges in a large bowl.
- Drizzle desired amount of dressing over the salad, toss everything together in a bowl, top with almonds, and serve immediately.
Notes
- For the dressing, use fresh lemon juice for the best flavor.
- Add more brown sugar if you prefer a sweeter coating for the almonds.
