Spinach and Almond Salad with Lemon Dressing

Description

A refreshing salad featuring baby spinach, toasted almonds, and a zesty lemon dressing.


Ingredients

Scale
  • 1/2 Cup Almonds (Slivered)
  • 2 Tablespoons Butter
  • 1/4 Cup Brown Sugar (or more)
  • 1 teaspoon Cinnamon
  • 1 Cup Lemon Juice (use as much fresh as you can)
  • 1/2 Cup Oil (canola or vegetable)
  • 1/2 Cup Sugar
  • 1/4 teaspoon Ginger (ground)
  • 1/8 Cup Lemon Zest (2 tablespoons)
  • 1 Bunch Spinach (baby, washed)
  • Strawberries (sliced)
  • 1 Can Mandarin Oranges (drained, or blackberries)

Instructions

  1. Toast the almonds over medium heat, watching carefully so as to not burn until slightly browning. Make sure you move them around while toasting.
  2. Add butter, brown sugar, and cinnamon.
  3. Continue to cook, stirring frequently until brown sugar begins to bubble and stick to the almonds.
  4. Remove from heat and spread almonds on parchment paper to cool.
  5. Place the dressing ingredients in a jar and shake to combine or place in a bowl and whisk together.
  6. Combine the spinach, berries, and oranges in a large bowl.
  7. Drizzle desired amount of dressing over the salad, toss everything together in a bowl, top with almonds, and serve immediately.

Notes

  • For the dressing, use fresh lemon juice for the best flavor.
  • Add more brown sugar if you prefer a sweeter coating for the almonds.
