- 1 ½ cups all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ¼ cups buttermilk
- 1 egg
- 2 tbsp melted butter
- 900 g (2 lbs) ground beef (80/20 preferred)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & black pepper to taste
- 8 slices sharp cheddar cheese
- Pickle slices
- Extra cheese sauce (optional, melted cheddar or nacho cheese)
- Maple syrup drizzle (optional, for a sweet-savory twist)
Instructions
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, egg, and melted butter.
- Combine wet and dry ingredients just until smooth.
- Heat a nonstick skillet and cook pancakes (about 4-inch rounds). Set aside.
- Form ground beef into loose 2 oz balls.
- Heat a cast-iron skillet until very hot. Place beef ball, then press down firmly with a spatula to “smash.”
- Season with salt, pepper, garlic powder, and paprika.
- Cook 1–2 minutes per side until caramelized and juicy.
- Top with cheddar slice and let melt.
- Layer pancake → cheese smash patty → pickles → repeat until desired height.
- Drizzle with cheese sauce or maple syrup if adventurous.
Notes
- For best results, use a cast-iron skillet for the burgers.
- Adjust the thickness of pancakes based on preference.
