- ½ cup coconut milk
- 1 tablespoon cocoa powder
- 1 tablespoon maple syrup
- ½ tablespoon peanut butter (or other nut butter)
- ½ teaspoon vanilla extract
- 1 tablespoon toasted coconut flakes (for topping)
- 1 tablespoon chocolate date syrup (for topping)
- 1 tablespoon peanut butter (for topping)
- 1 samoas cookie (for topping (optional))
Instructions
- Make the overnight oats: In a jar or bowl, combine the oats, cocoa powder, peanut butter, maple syrup, vanilla extract, and coconut milk. Stir until well combined.
- Refrigerate overnight: Cover and place in the fridge overnight (or at least 4 hours).
- Add toppings and enjoy: The next morning, add a layer of toasted coconut flakes, then drizzle with chocolate date syrup and peanut butter for that classic Samoas-style finish. Enjoy!
