Description

Delicious lemon poppy seed muffins with a sweet glaze, perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons poppy seeds
  • 1/3 cup unsalted butter (at room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2/3 cup vanilla Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons lemon zest
  • 3 tablespoons lemon juice (freshly squeezed)
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice (freshly squeezed, plus more as needed)

Instructions

  1. Preheat your oven to 425 degrees F. Line a muffin tin with cupcake liners. Set aside.
  2. In a medium mixing bowl, sift the flour, baking powder, baking soda, salt, and poppy seeds together. Set aside.
  3. In a large mixing bowl, beat the butter on high speed until it is creamy, about 90 seconds. Then add the sugar and beat together for 1 minute. Add the eggs, vanilla, lemon zest, and yogurt, and mix until just combined. Then add in the lemon juice and stir to mix.
  4. Add the flour mixture to the wet ingredients a little at a time, just until combined. Fill each lined muffin tin cup 3/4 full with the muffin batter.
  5. Bake for 5 minutes at 425F. Then turn the oven down to 350 degrees F and bake for another 10 minutes or until a toothpick comes out clean.
  6. Remove from the oven, carefully remove from the muffin tin, and let cool on a wire rack.
  7. Make glaze by whisking the powdered sugar and lemon juice together until it has a drizzling consistency. Drizzle over the cooled muffins.
