- 2 bell peppers, chopped
- 8 leaves lettuce (iceberg or romaine)
- 1 cup diced tomatoes
- 1 avocado, diced
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1 can beans (black beans or kidney beans)
Instructions
- Prepare the Ingredients: Start by gathering all your ingredients. Chop the bell peppers, and set aside your toppings.
- Cook the Chicken: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the ground chicken. Cook until browned and no longer pink, breaking it apart with a spatula as it cooks, about 5-7 minutes.
- Add Vegetables: Stir in the chopped bell peppers and cook for another 2-3 minutes until they soften.
- Season: Sprinkle in your homemade or store-bought chili seasoning. Add a splash of chicken broth or water to help distribute the spices evenly. Stir well and let it simmer for about 5 minutes.
- Prepare the Lettuce Wraps: While the chicken mixture is simmering, carefully separate the lettuce leaves. Rinse and pat them dry. These will serve as your wraps.
- Assemble the Wraps: Spoon the chicken chili mixture into the center of each lettuce leaf. Top with your choice of toppings, such as diced tomatoes, avocado, cheese, or sour cream.
- Serve: Enjoy immediately, either as finger food or with a fork and knife if you prefer!
