- 1 large bag tortilla chips
- 2 cups cooked grilled chicken, chopped
- 1 ½ cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4–6 slices cooked bacon, crumbled
- ¼ cup diced red onion
- 2 tbsp chopped chives or green onions
- Sour cream or ranch (for serving)
- Jalapeño slices (optional)
- Salsa or pico de gallo (optional)
- Guacamole (optional)
Instructions
- Prep the Chicken: If your chicken is plain, toss it quickly with 1 tbsp olive oil, ½ tsp paprika, ½ tsp garlic powder, and a pinch of salt + pepper.
- Build the Nachos: Preheat oven to 400°F / 205°C. On a baking sheet or oven-safe platter, spread a layer of tortilla chips. Add half the cheese, scatter chicken evenly over the top, add the remaining cheese, and finish with crumbled bacon.
- Bake: Bake for 8–12 minutes, until the cheese melts and edges are toasty.
- Finish & Serve: Top with diced red onion and chives or green onions. Serve immediately with sour cream or ranch.

- For extra heat, add jalapeño slices.
