  • 1 large bag tortilla chips
  • 2 cups cooked grilled chicken, chopped
  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 46 slices cooked bacon, crumbled
  • ¼ cup diced red onion
  • 2 tbsp chopped chives or green onions
  • Sour cream or ranch (for serving)
  • Jalapeño slices (optional)
  • Salsa or pico de gallo (optional)
  • Guacamole (optional)

Instructions

  1. Prep the Chicken: If your chicken is plain, toss it quickly with 1 tbsp olive oil, ½ tsp paprika, ½ tsp garlic powder, and a pinch of salt + pepper.
  2. Build the Nachos: Preheat oven to 400°F / 205°C. On a baking sheet or oven-safe platter, spread a layer of tortilla chips. Add half the cheese, scatter chicken evenly over the top, add the remaining cheese, and finish with crumbled bacon.
  3. Bake: Bake for 8–12 minutes, until the cheese melts and edges are toasty.
  4. Finish & Serve: Top with diced red onion and chives or green onions. Serve immediately with sour cream or ranch.
