Description

A refreshing and vibrant salsa made with black beans, corn, and a mix of fresh vegetables, perfect for dipping or as a topping.


Ingredients

Scale
  • 1 can (15 oz.) black beans (drained and rinsed)
  • 1 can (15 oz.) corn (drained and rinsed)
  • 1/4 medium red onion (chopped)
  • 1 red bell pepper (chopped)
  • 3 tablespoons green onions (chopped)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup extra virgin olive oil
  • 2 limes (juiced)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and Pepper (to taste)

Instructions

  1. Place black beans, corn, red onion, red bell pepper, scallions and cilantro in a large bowl. Mix thoroughly, set aside.
  2. Add extra virgin olive oil, lime juice, dried oregano, smoked paprika and salt and pepper to a medium bowl. Mix well until all ingredients are well incorporated.
  3. Pour liquid mixture over salsa and mix thoroughly so the salsa is evenly coated. If desired, add additional salt and pepper, to taste.
  4. Cover and refrigerate for at least one hour before serving.

Notes

  • This salsa can be stored in the refrigerator for up to 3 days.
  • For a spicier kick, add diced jalapeños.
  • Serve with tortilla chips or as a topping for grilled chicken or fish.
