  • 4 tbsp unsalted butter, softened

  • 1 cup sharp cheddar, shredded

Instructions

  1. Mix butter and mayo together in a small bowl. Spread a thin, even layer on one side of each bread slice.
  2. Heat a large skillet or griddle over medium-low heat. Place bread slices butter-side down. Layer with cheeses (and add-ins, if using). Top with another slice of bread, butter-side up.
  3. Cook low and slow for 3–4 minutes per side until golden and crisp, and cheese is fully melted. Press gently with a spatula to encourage melting.
