- 8 slices thick-cut sourdough bread (or your favorite rustic bread)
- 4 tbsp unsalted butter, softened
- 2 tbsp mayonnaise (for extra crisp)
- 1 cup sharp cheddar, shredded
- 1 cup mozzarella, shredded (for stretch)
- 1 cup Gruyère or fontina, shredded (for nuttiness)
- ½ cup cream cheese or brie (for creaminess)
- Optional Add-Ins: crispy bacon bits, caramelized onions, sun-dried tomatoes or roasted red peppers, jalapeños for heat
Instructions
- Mix butter and mayo together in a small bowl. Spread a thin, even layer on one side of each bread slice.
- Heat a large skillet or griddle over medium-low heat. Place bread slices butter-side down. Layer with cheeses (and add-ins, if using). Top with another slice of bread, butter-side up.
- Cook low and slow for 3–4 minutes per side until golden and crisp, and cheese is fully melted. Press gently with a spatula to encourage melting.
- Slice in half and serve hot with tomato soup, marinara, or a spicy dipping sauce.
