Description

Ingredients

  • ½ cup unsalted butter, melted and cooled
  • ⅓ cup granulated sugar
  • ⅔ cup brown sugar (light or dark)
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • ½ cup Dutch-processed cocoa powder
  • 1 large egg
  • 1 egg yolk
  • 1 ¼ cups all-purpose flour
  • ¾ teaspoon baking soda
  • 1 cup dark chocolate chunks (60–70% cacao)
  • ½ cup semi-sweet chocolate chips (50–60% cacao)

Instructions

  1. In a large mixing bowl, combine the melted and cooled butter, granulated sugar, brown sugar, vanilla extract, egg, egg yolk, and salt. Whisk until smooth.
  2. Sift in the cocoa powder and mix until fully incorporated.
  3. Add the flour and baking soda, stirring until almost combined.
  4. Fold in the chocolate chunks and chips until evenly distributed. Do not overmix.
  5. Cover the dough and chill in the refrigerator for at least 1 hour.
  6. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  7. Scoop about 1 tablespoon of dough per cookie and place on the baking sheet.
  8. Bake for 12–14 minutes, until edges are set and centers look soft.
  9. While still warm, press extra chocolate chips or chunks on top if desired.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
