Description
These Strawberry Crunch Cheesecake Bites are the perfect no-bake treat — creamy cheesecake filling rolled in a nostalgic strawberry-cookie crunch. They’re quick to make, beautiful to serve, and always the first to disappear at parties!
Ingredients
4 oz (half block) cream cheese, softened
2 tbsp powdered sugar
1/2 tsp vanilla extract
1/4 cup heavy whipping cream, whipped to stiff peaks
1/4 cup crushed Golden Oreos
1/4 cup freeze-dried strawberries, crushed
Instructions
In a medium bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
In a separate bowl, whip heavy cream to stiff peaks.
Gently fold the whipped cream into the cream cheese mixture until fully combined.
Scoop about 1 tablespoon of mixture, roll into a ball, and place on a parchment-lined plate or tray.
Freeze for 20–30 minutes until firm enough to handle.
In a shallow bowl, mix crushed Golden Oreos and freeze-dried strawberries until blended.
Roll each chilled cheesecake ball in the strawberry crunch mixture until fully coated.
Serve immediately or refrigerate until ready to enjoy.
Notes
For the smoothest filling, make sure cream cheese is completely softened before mixing.
Crush cookies and strawberries finely for a smoother coating or leave them chunky for extra texture.
Store in an airtight container in the fridge for up to 4 days, or freeze uncoated bites for up to a month and coat just before serving.
Swap Golden Oreos for graham crackers or vanilla wafers for a different twist.
