Description

Ingredients

  • 2 lbs (900 g) ground beef (80/20 blend for juiciness)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper, to taste
  • 2 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Pinch of salt
  • 12 slider buns (brioche preferred)
  • 12 slices American cheese (or cheddar for sharper flavor)
  • 2 tbsp butter, melted (for toasting buns)
  • Pickles (optional, for serving)

Instructions

  1. In a skillet, melt butter with olive oil over medium heat. Add sliced onions and a pinch of salt. Cook, stirring occasionally, until golden brown and soft (20–25 minutes). Remove from heat.
  2. Mix ground beef with Worcestershire, garlic powder, onion powder, salt, and pepper. Form into small balls (about 2 oz each). Heat a cast-iron skillet or griddle over high heat until very hot. Place beef balls on the skillet and immediately smash flat with a spatula or burger press. Cook 2 minutes, then flip, add cheese, and cook another 1–2 minutes until cheese melts.
  3. Brush slider buns with melted butter. Toast cut side down on the skillet until golden brown.
  4. Place cheesy smash patties on toasted buns. Top with caramelized onions. Stack them up into a glorious tower and serve with extra napkins!
