Ingredients

  • 6 oz (170g) white chocolate, melted and cooled
  • 2 tsp instant espresso powder
  • 1 tsp vanilla extract
  • 1 cup (100g) crushed chocolate cookies or ladyfingers
  • 78 oz (200g) dark chocolate, melted (for coating)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. In a medium mixing bowl, combine cold mascarpone, cooled white chocolate, espresso powder, and vanilla. Stir until smooth and creamy (do not overmix).
  2. Cover the bowl and refrigerate for 1 hour until the mixture firms up enough to scoop.
  3. Using a small cookie scoop or teaspoon, portion the filling and roll into balls. Place onto a parchment-lined baking sheet and freeze for 20–30 minutes.
  4. Dip each chilled ball into melted dark chocolate, allowing excess to drip off. Place back onto parchment and let the chocolate set.
  5. Dust with cocoa powder before serving.
