Description

Inspired by stormy night skies and lightning flashes, these Thunder Sky Candy Apples feature a dramatic blue-and-purple marble coating with a dazzling shimmer. The flavor is a mix of vanilla and blue raspberry, giving the same energy as a summer storm in candy form!


Ingredients

  • 6 small to medium apples (Granny Smith, Fuji, or Honeycrisp work best)
  • Wooden or metallic sticks
  • 2 cups granulated sugar
  • ½ cup light corn syrup
  • ¾ cup water
  • ½ tsp vanilla extract or blue raspberry extract
  • ¼ tsp cream of tartar (optional, for smoother syrup)
  • ½ tsp navy blue food gel color
  • ¼ tsp purple food gel color
  • A few drops of black food gel color (to deepen the galaxy tone)
  • Edible pearl dust or silver luster dust
  • Optional: blue edible glitter or metallic shimmer spray

Instructions

  1. Prep the apples: Remove wax coating by dipping apples in hot water with vinegar for a few seconds. Dry thoroughly and insert sticks into the top center. Place apples on a parchment-lined tray.
  2. Make the candy syrup: Combine sugar, corn syrup, and water in a medium saucepan. Bring to a boil over medium-high heat, stirring just until the sugar dissolves. Once boiling, stop stirring and let it reach 300°F (hard-crack stage) on a candy thermometer. Immediately remove from heat.
  3. Add color & flavor: Stir in extract and all gel food colors — start with blue and purple, then swirl in black. Do not overmix; gentle swirling keeps the galaxy marbling.
  4. Dip the apples: Working quickly, dip each apple into the syrup, turning to coat evenly. Tilt slightly to create natural streaks of color. Set upright on parchment paper and let cool for 15–20 minutes until hard and glossy.
  5. Add the thunder shine: Lightly dust the surface with edible pearl or luster dust using a soft brush. For an electric shimmer, spray with metallic silver or blue shimmer spray once cooled.
