Ingredients

  • 1 cup buttermilk (room temperature)

  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1 cup hot coffee (or hot water)
  • 1 cup whole milk
  • 3 tbsp cornstarch
  • ½ cup granulated sugar (for cream filling)
  • 1 tsp vanilla extract (for cream filling)
  • 1 cup heavy cream (whipped to stiff peaks)
  • 2 cups semi-sweet chocolate (chopped or chips)
  • 1 cup heavy cream (for ganache)
  • 2 tbsp unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add buttermilk, oil, eggs, and vanilla. Mix until combined.
  4. Slowly pour in hot coffee and whisk until smooth (batter will be thin).
  5. Divide batter evenly between pans and bake for 30–35 minutes, until a toothpick comes out clean.
  6. Let cakes cool completely before assembling.
  7. In a saucepan, whisk milk, cornstarch, and sugar over medium heat until thickened.
  8. Remove from heat, stir in vanilla, and let cool completely.
  9. Fold cooled mixture into whipped cream until smooth and fluffy.
  10. Heat heavy cream until simmering, then pour over chocolate.
  11. Let sit 2 minutes, then stir until smooth and glossy.
  12. Stir in butter for extra shine.
  13. Place one cake layer on a serving plate. Spread cream filling evenly over the top.
  14. Place second cake layer on top.
  15. Pour chocolate ganache over the cake, letting it drip down the sides.
  16. Chill 20 minutes to set before slicing.
