Description
Texas Twinkies are a delicious appetizer made with jalapeños stuffed with a savory mixture of cream cheese, smoked brisket, and cheese, all wrapped in crispy bacon.

- 10–12 large jalapeños
- 8 oz (226 g) cream cheese, softened
- 1–1½ cups chopped smoked brisket
- ½ cup shredded cheddar or pepper jack cheese
- 10–12 slices thick-cut bacon
- BBQ sauce, for brushing
Instructions
- Slice one side of each jalapeño lengthwise (do not cut all the way through).
- Remove seeds and membranes to reduce heat (leave some seeds if you prefer spicier Twinkies).
- In a bowl, mix cream cheese, chopped brisket, and shredded cheese until combined.
- Fill each jalapeño generously with the brisket-cheese mixture.
- Wrap each stuffed jalapeño completely with a slice of bacon, securing with toothpicks if needed.
- For the smoker method: Smoke at 275°F (135°C) for 1–1½ hours, brushing with BBQ sauce during the last 10–15 minutes.
- For the oven method: Preheat to 400°F (205°C). Place Twinkies on a baking rack set over a lined baking sheet. Bake for 25–30 minutes, brushing with BBQ sauce in the last 5–10 minutes, until bacon is crisp.
- Remove toothpicks, let cool slightly, and enjoy warm.

- For a spicier kick, leave some seeds in the jalapeños.
