A delicious blend of smoky brisket and melted cheese, grilled to perfection between thick slices of Texas toast.

- 8 slices thick-cut Texas toast (or sourdough bread)
- 4 tbsp butter (softened)
- 2 cups smoked brisket (sliced or shredded)
- 1 cup caramelized onions (optional but highly recommended)
- 1 ½ cups shredded cheddar cheese
- 1 ½ cups shredded Monterey Jack or provolone cheese
- ½ cup BBQ sauce (smoky or sweet, to taste)
Instructions
- In a skillet over medium-low heat, melt butter. Add onions, salt, and brown sugar. Cook slowly, stirring often, until golden and caramelized (25–30 minutes). Set aside.
- Spread butter evenly on one side of each bread slice. Place buttered side down when assembling.
- Layer brisket, caramelized onions, a drizzle of BBQ sauce, and a mix of cheeses between two slices of bread (buttered sides facing out).
- Heat a skillet or griddle over medium heat. Place sandwiches in the pan and cook until golden brown and crispy, about 3–4 minutes per side, pressing lightly. Cheese should be melted and brisket heated through.
- Cut in half, serve with extra BBQ sauce for dipping, and enjoy the smoky, cheesy goodness!
