Description
A deliciously sweet and spicy bacon jam that combines the flavors of jalapeños, brown sugar, and crispy bacon, perfect for spreading on toast or serving with cheese.

- 1 lb thick-cut bacon, chopped
- 1 large onion, finely sliced
- 2–3 jalapeños, seeded & diced (leave some seeds if you like it hotter)
- 3 cloves garlic, minced
- ½ cup brown sugar (light or dark)
- ¼ cup apple cider vinegar
- ¼ cup brewed coffee (or water for milder flavor)
- 2 tbsp maple syrup (or honey)
- ½ tsp smoked paprika
- ¼ tsp black pepper
Instructions
- In a large skillet over medium heat, cook bacon until crisp. Remove with a slotted spoon and set aside. Leave about 2 tbsp bacon fat in the pan.
- Add onions and jalapeños to the skillet. Cook 6–8 minutes until softened and caramelized. Stir in garlic and cook 1 more minute.
- Return bacon to skillet. Add brown sugar, vinegar, coffee, maple syrup, paprika, and pepper. Stir well.
- Reduce heat to low and simmer 25–30 minutes, stirring occasionally, until thick and jammy.
- Taste and adjust seasoning (add more vinegar for tang, more sugar for sweetness, or more jalapeños for heat). Let cool slightly, then transfer to jars. Store in the fridge for up to 3 weeks. Warm before serving for best flavor.
Notes
- For a spicier jam, leave some jalapeño seeds in.
- This jam pairs well with cream cheese and crackers.
