Description

Crispy on the outside, tender on the inside, these Sweet Potato & Red Lentil Patties are a nourishing blend of protein, fiber, and comfort, complemented by a creamy, tangy tahini dressing.


Ingredients

  • Red lentils – 1 cup, rinsed
  • Sweet potato – 1 large, peeled and cubed
  • Onion – ½ small, finely chopped
  • Garlic – 2 cloves, minced
  • Corn kernels – ½ cup (fresh or canned)
  • Chickpea flour (or all-purpose flour) – ½ cup
  • Ground cumin – 1 teaspoon
  • Smoked paprika – ½ teaspoon
  • Turmeric – ¼ teaspoon
  • Salt & pepper – to taste
  • Olive oil – for pan-frying
  • Tahini – ¼ cup (for dressing)
  • Lemon juice – 2 tablespoons (for dressing)
  • Maple syrup – 1 teaspoon (for dressing)
  • Garlic powder – ¼ teaspoon (for dressing)
  • Warm water – 2–3 tablespoons (to thin dressing)
  • Salt – pinch (for dressing)
  • Sliced green onions (for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Rinse red lentils and simmer in 2 cups water for 10–12 minutes until soft. Drain any excess water.
  2. Boil or steam sweet potato cubes until fork-tender. Mash lightly and let cool.
  3. In a large bowl, combine mashed sweet potato, cooked lentils, onion, garlic, corn, flour, and spices. Stir until mixture forms a thick, moldable dough.
  4. Form the mixture into small, thick rounds (about 2–3 inches wide).
  5. Heat olive oil in a non-stick pan over medium heat. Fry patties for 3–4 minutes per side until golden and crisp. Transfer to paper towels to drain.
  6. In a small bowl, whisk together tahini, lemon juice, maple syrup, garlic powder, and water until creamy and pourable.
  7. Stack the patties on a plate, drizzle generously with tahini dressing, and top with green onions and sesame seeds.
