Crispy on the outside, tender on the inside, these Sweet Potato & Red Lentil Patties are a nourishing blend of protein, fiber, and comfort, complemented by a creamy, tangy tahini dressing.
Ingredients
- Red lentils – 1 cup, rinsed
- Sweet potato – 1 large, peeled and cubed
- Onion – ½ small, finely chopped
- Garlic – 2 cloves, minced
- Corn kernels – ½ cup (fresh or canned)
- Chickpea flour (or all-purpose flour) – ½ cup
- Ground cumin – 1 teaspoon
- Smoked paprika – ½ teaspoon
- Turmeric – ¼ teaspoon
- Salt & pepper – to taste
- Olive oil – for pan-frying
- Tahini – ¼ cup (for dressing)
- Lemon juice – 2 tablespoons (for dressing)
- Maple syrup – 1 teaspoon (for dressing)
- Garlic powder – ¼ teaspoon (for dressing)
- Warm water – 2–3 tablespoons (to thin dressing)
- Salt – pinch (for dressing)
- Sliced green onions (for garnish)
- Toasted sesame seeds (for garnish)
Instructions
- Rinse red lentils and simmer in 2 cups water for 10–12 minutes until soft. Drain any excess water.
- Boil or steam sweet potato cubes until fork-tender. Mash lightly and let cool.
- In a large bowl, combine mashed sweet potato, cooked lentils, onion, garlic, corn, flour, and spices. Stir until mixture forms a thick, moldable dough.
- Form the mixture into small, thick rounds (about 2–3 inches wide).
- Heat olive oil in a non-stick pan over medium heat. Fry patties for 3–4 minutes per side until golden and crisp. Transfer to paper towels to drain.
- In a small bowl, whisk together tahini, lemon juice, maple syrup, garlic powder, and water until creamy and pourable.
- Stack the patties on a plate, drizzle generously with tahini dressing, and top with green onions and sesame seeds.

- These patties can be made ahead of time and stored in the refrigerator for easy meal prep.
