Description

Delicious Swedish Semla Buns filled with cream and berry jam, perfect for a sweet treat.


Ingredients

Scale
  • 1 cup (240 ml) warm milk (110°F / 43°C)
  • ¼ cup (50 g) granulated sugar
  • 1 packet (7 g) active dry yeast
  • 3 ½ cups (420 g) all-purpose flour
  • 1 tsp ground cardamom
  • ½ tsp salt
  • 1 large egg
  • 6 tbsp (85 g) unsalted butter, softened
  • 1 ½ cups heavy cream, cold
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup berry jam (raspberry, strawberry, or lingonberry)
  • Powdered sugar for dusting

Instructions

  1. In a bowl, mix warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. Stir in egg, butter, cardamom, and salt.
  3. Gradually add flour until a soft dough forms.
  4. Knead for 8–10 minutes until smooth and elastic.
  5. Place in a greased bowl, cover, and let rise 1 hour (or until doubled).
  6. Punch down dough, divide into 12 equal portions, and shape into round buns.
  7. Place on a baking sheet lined with parchment. Cover and let rise 30 minutes.
  8. Preheat oven to 375°F (190°C).
  9. Brush tops with egg wash (1 egg + 1 tbsp milk).
  10. Bake 12–15 minutes until golden brown. Let cool completely.
  11. Whip cream with powdered sugar and vanilla until soft peaks form.
  12. Slice tops off buns (set aside as “lids”).
  13. Spread berry jam at the base, pipe or spoon whipped cream on top, and replace the lids.
  14. Dust generously with powdered sugar.

Notes

  • Ensure the milk is warm but not hot to activate the yeast.
  • For best results, use fresh yeast.
  • Feel free to experiment with different berry jams.
