Description
Delicious Swedish Semla Buns filled with cream and berry jam, perfect for a sweet treat.
Ingredients

- 1 cup (240 ml) warm milk (110°F / 43°C)
- ¼ cup (50 g) granulated sugar
- 1 packet (7 g) active dry yeast
- 3 ½ cups (420 g) all-purpose flour
- 1 tsp ground cardamom
- ½ tsp salt
- 1 large egg
- 6 tbsp (85 g) unsalted butter, softened
- 1 ½ cups heavy cream, cold
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 cup berry jam (raspberry, strawberry, or lingonberry)
- Powdered sugar for dusting
Instructions
- In a bowl, mix warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
- Stir in egg, butter, cardamom, and salt.
- Gradually add flour until a soft dough forms.
- Knead for 8–10 minutes until smooth and elastic.
- Place in a greased bowl, cover, and let rise 1 hour (or until doubled).
- Punch down dough, divide into 12 equal portions, and shape into round buns.
- Place on a baking sheet lined with parchment. Cover and let rise 30 minutes.
- Preheat oven to 375°F (190°C).
- Brush tops with egg wash (1 egg + 1 tbsp milk).
- Bake 12–15 minutes until golden brown. Let cool completely.
- Whip cream with powdered sugar and vanilla until soft peaks form.
- Slice tops off buns (set aside as “lids”).
- Spread berry jam at the base, pipe or spoon whipped cream on top, and replace the lids.
- Dust generously with powdered sugar.
Notes
- Ensure the milk is warm but not hot to activate the yeast.
- For best results, use fresh yeast.
- Feel free to experiment with different berry jams.
