- 1 large bag tortilla chips
- 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1/2 cup queso or nacho cheese sauce (optional for extra creaminess)
- 1 lb flank steak or skirt steak
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt & pepper, to taste
- Juice of 1 lime
- 1 lb large shrimp, peeled & deveined
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp chili flakes (optional for heat)
- 1 garlic clove, minced
- 1 cup guacamole
- 1 cup pico de gallo (fresh tomato salsa)
- 1/4 cup sour cream (optional)
- Fresh cilantro, chopped
- Jalapeños (optional, fresh or pickled)
Instructions
- Rub steak with olive oil, chili powder, cumin, garlic powder, salt, pepper, and lime juice. Grill or sear on a hot skillet for 4–5 minutes per side (medium-rare to medium). Let rest 5 minutes, then slice thinly against the grain.
- Toss shrimp with olive oil, paprika, garlic, chili flakes, salt, and pepper. Cook in a hot skillet for 2–3 minutes per side until pink and slightly charred.
- Preheat oven to 375°F (190°C). Spread tortilla chips in a large baking dish or sheet pan. Sprinkle half the cheese over chips, layer steak slices and shrimp, then add remaining cheese. Bake 8–10 minutes until cheese is melted and bubbly.
- Remove nachos from oven and immediately top with guacamole, pico de gallo, and sour cream (if using). Garnish with cilantro and jalapeños. Serve hot and enjoy with extra lime wedges.
