Ingredients

  • 2 cups graham cracker crumbs (or digestive biscuits, finely crushed)
  • 1/2 cup unsalted butter, melted
  • 2 tbsp sugar
  • 1 package (8 oz / 225 g) cream cheese, softened
  • 1 cup heavy cream, whipped to stiff peaks
  • 1 can (14 oz / 400 g) sweetened condensed milk
  • 1/2 cup orange juice (freshly squeezed is best)
  • 1 tbsp orange zest
  • 2 tsp vanilla extract
  • 1 cup orange juice
  • 1/4 cup sugar
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • Fresh orange slices for decoration
  • Mint leaves for decoration

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix crushed graham crackers, melted butter, and sugar. Press firmly into the bottom and up the sides of a 9-inch pie pan.
  3. Bake for 8–10 minutes until lightly golden. Let cool completely.
  4. Beat cream cheese until smooth. Add sweetened condensed milk, orange juice, zest, and vanilla. Mix until creamy.
  5. Gently fold in whipped cream until smooth and airy. Spread filling evenly into cooled crust. Chill for 2 hours.
  6. In a saucepan, heat orange juice and sugar until warm. Stir in cornstarch slurry and cook until thickened and glossy.
  7. Cool slightly, then pour gently over pie. Chill until set (about 1 hour).
  8. Whip heavy cream with powdered sugar and vanilla until soft peaks form. Pipe or spread around edges. Garnish with orange slices and mint.

Notes

  • For best results, use freshly squeezed orange juice.
  • Make sure the crust is completely cooled before adding the filling.
