Ingredients

  • 200 g (2 cups) graham cracker crumbs (or digestive biscuits, finely crushed)
  • 90 g (6 tbsp) unsalted butter, melted
  • 2 tbsp sugar
  • 400 g (14 oz) sweetened condensed milk
  • 300 g (10 oz) white chocolate, chopped
  • ½ cup freeze-dried strawberries, finely crushed
  • 1 tsp vanilla extract
  • Few drops pink or red gel food coloring (optional)
  • 50 g white chocolate, melted (for drizzling)
  • Fresh strawberries, halved or sliced

Instructions

  1. Preheat oven to 175°C (350°F).
  2. Mix graham cracker crumbs, melted butter, and sugar until sandy.
  3. Press firmly into the bottom of a lined 8×8 inch (20×20 cm) pan.
  4. Bake for 8–10 minutes, then let cool.
  5. In a saucepan, heat condensed milk gently over low heat.
  6. Add chopped white chocolate, stirring until smooth and melted.
  7. Stir in crushed freeze-dried strawberries, vanilla, and coloring if desired.
  8. Pour mixture over cooled crust, smoothing the top.
  9. Chill in fridge 3–4 hours (or until set).
  10. Once set, drizzle with melted white chocolate.
  11. Cut into squares or bars.
  12. Garnish with fresh strawberry halves.
