Description

Strawberry Crunch Cheesecake Bites are a delightful dessert combining a creamy cheesecake filling with a crunchy strawberry topping, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • ½ cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 20 Golden Oreos (or vanilla sandwich cookies), crushed
  • 3 tbsp strawberry gelatin powder (or freeze-dried strawberry powder)
  • 4 tbsp unsalted butter, melted

Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until sandy. Press into the bottom of lined or greased muffin tins (about 1 tbsp per cup). Bake for 5 minutes, then set aside.
  3. Beat softened cream cheese until smooth. Add sugar, sour cream, and vanilla; mix until creamy. Beat in eggs one at a time, just until combined (don’t overmix). Spoon filling over crusts in muffin tins.
  4. Bake at 325°F (165°C) for 16–18 minutes, until centers are set but slightly jiggly. Cool to room temp, then refrigerate for at least 4 hours (or overnight).
  5. Crush Golden Oreos into fine crumbs. Mix with strawberry gelatin powder and melted butter until crumbly. Sprinkle or press over chilled cheesecake bites.

Notes

  • For best results, chill the cheesecake bites overnight.
  • Feel free to substitute with other flavored gelatin for different variations.
  • These bites can be stored in the refrigerator for up to a week.
