A delightful and airy Strawberry Cloud Layer Cake featuring layers of vanilla sponge cake, creamy filling, and fresh strawberries.

- 1½ cups (190 g) all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
- 4 large eggs, room temperature
- ¾ cup (150 g) granulated sugar
- 1 tsp vanilla extract
- ½ cup (120 ml) whole milk
- ¼ cup (60 g) unsalted butter, melted and cooled
- 1 cup (240 ml) heavy whipping cream
- 1 cup (225 g) mascarpone cheese (or cream cheese)
- ½ cup (60 g) powdered sugar
- 1 tsp vanilla extract
- 2 cups (300 g) fresh strawberries, hulled and sliced
- 2 tbsp sugar
- 1 tbsp lemon juice
- Whole strawberries (for topping)
- White chocolate shavings
- Extra whipped cream for piping
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 8-inch (20 cm) round or square pans with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat eggs and sugar for 4–5 minutes, until thick and pale.
- Add vanilla extract and beat for another 30 seconds.
- Gently fold in dry ingredients using a spatula.
- In a small bowl, mix warm milk with melted butter, then fold it into the batter.
- Divide batter evenly into pans and bake for 22–25 minutes, until golden and springy.
- Cool completely on wire racks.
- Toss sliced strawberries with sugar and lemon juice. Let sit for 10–15 minutes to release juices.
- Beat cold heavy cream until soft peaks form.
- In a separate bowl, beat mascarpone cheese with powdered sugar and vanilla until smooth.
- Fold whipped cream gently into the mascarpone mixture until fluffy and unified.
- Slice each sponge in half horizontally to create 4 thin layers (optional).
- Place one cake layer on your serving plate. Spread a layer of cream filling, then spoon some macerated strawberries on top.
- Repeat layering — cake, cream, strawberries — ending with a cake layer.
- Frost the top with remaining cream and decorate with piped swirls, whole strawberries, and white chocolate shavings.
