Description

A delightful and airy Strawberry Cloud Layer Cake featuring layers of vanilla sponge cake, creamy filling, and fresh strawberries.


Ingredients

  • 1½ cups (190 g) all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 4 large eggs, room temperature
  • ¾ cup (150 g) granulated sugar
  • 1 tsp vanilla extract
  • ½ cup (120 ml) whole milk
  • ¼ cup (60 g) unsalted butter, melted and cooled
  • 1 cup (240 ml) heavy whipping cream
  • 1 cup (225 g) mascarpone cheese (or cream cheese)
  • ½ cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 2 cups (300 g) fresh strawberries, hulled and sliced
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • Whole strawberries (for topping)
  • White chocolate shavings
  • Extra whipped cream for piping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch (20 cm) round or square pans with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat eggs and sugar for 4–5 minutes, until thick and pale.
  4. Add vanilla extract and beat for another 30 seconds.
  5. Gently fold in dry ingredients using a spatula.
  6. In a small bowl, mix warm milk with melted butter, then fold it into the batter.
  7. Divide batter evenly into pans and bake for 22–25 minutes, until golden and springy.
  8. Cool completely on wire racks.
  9. Toss sliced strawberries with sugar and lemon juice. Let sit for 10–15 minutes to release juices.
  10. Beat cold heavy cream until soft peaks form.
  11. In a separate bowl, beat mascarpone cheese with powdered sugar and vanilla until smooth.
  12. Fold whipped cream gently into the mascarpone mixture until fluffy and unified.
  13. Slice each sponge in half horizontally to create 4 thin layers (optional).
  14. Place one cake layer on your serving plate. Spread a layer of cream filling, then spoon some macerated strawberries on top.
  15. Repeat layering — cake, cream, strawberries — ending with a cake layer.
  16. Frost the top with remaining cream and decorate with piped swirls, whole strawberries, and white chocolate shavings.
