  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • ½ cup strawberry puree (blended fresh strawberries)
  • Few drops pink food coloring (optional)
  • 2 cups fresh strawberries (sliced, plus extra whole for topping)

Instructions

  1. Preheat oven to 175°C (350°F). Grease and line two 8-inch cake pans.
  2. Whisk flour, cocoa, baking powder, baking soda, and salt for the chocolate cake.
  3. Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Alternate adding dry ingredients and buttermilk. Pour into pans and bake for 22–25 minutes. Let cool.
  5. Repeat the same process with the vanilla cake ingredients and bake for 20–22 minutes. Let cool.
  6. Whip heavy cream with powdered sugar until soft peaks form. Add strawberry puree and food coloring, then whip to stiff peaks.
  7. Assemble the cake by placing one chocolate layer as the base. Spread a layer of strawberry cream and add sliced strawberries.
  8. Place one vanilla cake layer on top and repeat with strawberry cream and strawberries. Continue layering until all layers are stacked.
  9. Frost the outside with pink strawberry cream.
  10. Top with whole fresh strawberries and chill for 1–2 hours before slicing for clean layers.
