Ingredients

  • ¼ cup granulated sugar
  • 2 ¼ tsp active dry yeast (1 packet)
  • ½ tsp salt
  • ¾ cup warm milk (110°F / 43°C)
  • 2 tbsp unsalted butter, softened
  • 1 large egg
  • Oil, for frying
  • 8 oz cream cheese (softened)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy cream (whipped to soft peaks)
  • 1 cup fresh strawberries (diced)
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp milk (adjust for consistency)
  • 12 drops strawberry puree or pink food coloring
  • Extra powdered sugar (for dusting)

Instructions

  1. In a bowl, mix warm milk, yeast, and 1 tbsp sugar. Let sit for 5 minutes until foamy.
  2. Add flour, remaining sugar, salt, egg, and butter. Knead until smooth and elastic (8–10 minutes).
  3. Cover and let rise for 1 hour, until doubled in size.
  4. Beat cream cheese, powdered sugar, and vanilla until smooth.
  5. Fold in whipped cream for a light texture. Chill until ready to use.
  6. In a small pan, heat diced strawberries with sugar and lemon juice until syrupy (about 5 minutes). Cool completely.
  7. Roll dough to ½-inch thickness. Cut into rounds using a donut cutter (or cookie cutter for filled rings).
  8. Heat oil to 350°F (175°C). Fry donuts 1–2 minutes per side until golden. Drain on paper towels.
  9. Once cooled slightly, pipe cheesecake filling inside the donuts.
  10. Add a spoonful of strawberry mixture in each donut or swirl it with the filling.
  11. Dip tops in strawberry glaze, sprinkle with powdered sugar, and garnish with fresh strawberry pieces.
