Description
A delicious and sweet breakfast treat combining the flavors of strawberry cheesecake and French toast.
Ingredients

- 8 slices of sandwich bread (soft, white or brioche works best)
- 4 oz (115 g) cream cheese, softened
- 2 tbsp powdered sugar (plus extra for dusting)
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
- 2 eggs
- ¼ cup milk
- 2 tbsp sugar
- 1 tsp cinnamon
- 2 tbsp butter (for frying)
Instructions
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Stir in diced strawberries (save some for garnish if desired).
- Cut crusts off each slice of bread.
- Roll out each slice with a rolling pin to flatten.
- Spread about 1 tbsp of cheesecake mixture onto each slice.
- Roll tightly into a log, sealing the edges.
- In a shallow bowl, whisk together eggs and milk.
- In another bowl, mix sugar and cinnamon.
- Dip each roll in the egg mixture, then lightly roll in cinnamon-sugar.
- Heat butter in a skillet over medium heat.
- Cook roll-ups for 2–3 minutes per side until golden and crispy.
- Dust with powdered sugar and serve with extra fresh strawberries.
Notes
- For a richer flavor, use brioche bread.
- Feel free to add more strawberries for garnish.
- These roll-ups can be made ahead and reheated in the oven.
