Description

A delicious and sweet breakfast treat combining the flavors of strawberry cheesecake and French toast.


Ingredients

  • 8 slices of sandwich bread (soft, white or brioche works best)
  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp powdered sugar (plus extra for dusting)
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 2 eggs
  • ¼ cup milk
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 2 tbsp butter (for frying)

Instructions

  1. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Stir in diced strawberries (save some for garnish if desired).
  3. Cut crusts off each slice of bread.
  4. Roll out each slice with a rolling pin to flatten.
  5. Spread about 1 tbsp of cheesecake mixture onto each slice.
  6. Roll tightly into a log, sealing the edges.
  7. In a shallow bowl, whisk together eggs and milk.
  8. In another bowl, mix sugar and cinnamon.
  9. Dip each roll in the egg mixture, then lightly roll in cinnamon-sugar.
  10. Heat butter in a skillet over medium heat.
  11. Cook roll-ups for 2–3 minutes per side until golden and crispy.
  12. Dust with powdered sugar and serve with extra fresh strawberries.

Notes

  • For a richer flavor, use brioche bread.
  • Feel free to add more strawberries for garnish.
  • These roll-ups can be made ahead and reheated in the oven.
