- 1 pint fresh strawberries (hulled, small/medium)
- 12 oz pink candy melts (or white chocolate dyed pink)
- ½ cup strawberry crumbs (from blending freeze-dried strawberries or cake crumbs)
- Rainbow sprinkles (for topping)
Instructions
- Prepare the strawberry cake mix according to package directions (or your favorite strawberry cake recipe).
- Let it cool completely, then crumble it into fine crumbs.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Mix in cake crumbs until a dough-like mixture forms.
- Take a spoonful of the mixture and flatten slightly.
- Place a small whole strawberry in the center and wrap the mixture around it to form a ball.
- Freeze for 20 minutes to firm up.
- Melt candy melts in the microwave in 30-second bursts until smooth.
- Dip each truffle, coating completely.
- Immediately roll in strawberry crumbs and top with sprinkles before coating hardens.
- Refrigerate for at least 30 minutes until set.
- Serve chilled for best flavor and texture.
