Description

These bite-sized strawberry cake truffles are coated in a sweet strawberry crumb, filled with a fresh strawberry and creamy center, and topped with colorful sprinkles. They’re fun, vibrant, and perfect for parties or a sweet snack.

Ingredients

Scale
  • 1 box strawberry cake mix (or homemade strawberry cake)
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 cup water
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 pint fresh strawberries (hulled, small/medium)
  • 12 oz pink candy melts (or white chocolate dyed pink)
  • ½ cup strawberry crumbs (from blending freeze-dried strawberries or cake crumbs)
  • Rainbow sprinkles (for topping)

Instructions

  1. Prepare the strawberry cake mix according to package directions (or your favorite strawberry cake recipe).
  2. Let it cool completely, then crumble it into fine crumbs.
  3. Beat cream cheese, powdered sugar, and vanilla until smooth.
  4. Mix in cake crumbs until a dough-like mixture forms.
  5. Take a spoonful of the mixture and flatten slightly.
  6. Place a small whole strawberry in the center and wrap the mixture around it to form a ball.
  7. Freeze for 20 minutes to firm up.
  8. Melt candy melts in the microwave in 30-second bursts until smooth.
  9. Dip each truffle, coating completely.
  10. Immediately roll in strawberry crumbs and top with sprinkles before coating hardens.
  11. Refrigerate for at least 30 minutes until set.
  12. Serve chilled for best flavor and texture.

Notes

  • For a more intense strawberry flavor, use freeze-dried strawberries for the crumbs.
  • These truffles can be stored in the refrigerator for up to a week.
  • Feel free to customize the sprinkles based on the occasion.
