Description

This delicious dish features seared chicken thighs tossed with fresh spinach, garlic, and lemon for a flavorful meal.


Ingredients

  • 4 pieces chicken thighs, bone-in, skin-on (preferably plump and fresh)
  • 4 cups fresh spinach (washed and drained)
  • 3 cloves garlic (finely minced)
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil (good quality extra virgin)
  • to taste salt (sea salt preferred)
  • to taste black pepper (freshly cracked)
  • pinch chili flakes (optional, for a smoky kick)

Instructions

  1. Season the chicken thighs with salt, pepper, and chili flakes (if using).
  2. Heat olive oil in a large skillet over medium heat.
  3. Place chicken thighs skin-side down and sear for 6-7 minutes until golden brown.
  4. Flip chicken and cook for another 6-7 minutes until fully cooked.
  5. Remove chicken from the skillet and set aside.
  6. In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  7. Add spinach and cook until wilted, stirring occasionally.
  8. Stir in lemon juice and zest, adjusting seasoning with salt and pepper.
  9. Return chicken to the skillet and toss to combine with spinach and garlic.
  10. Serve warm.
