Description

A creamy cheesecake with a chocolate cookie crust, decorated with a chocolate spiderweb and adorable pretzel-leg spiders — the perfect Halloween dessert!


Ingredients

  • 1 ½ cups graham cracker crumbs (or crushed digestive biscuits)
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 3 (8 oz) blocks cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temp
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • ½ cup semi-sweet chocolate chips
  • 1 tsp vegetable oil (to thin the chocolate)
  • Chocolate truffles, malt balls, or donut holes (for bodies)
  • Mini chocolate chips or candy eyes
  • Pretzel sticks (for legs, broken into short pieces)
  • A little melted chocolate (for “glue”)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs, sugar, and melted butter until evenly moistened.
  3. Press firmly into the bottom of a 9-inch springform pan.
  4. Bake 8 minutes, then set aside.
  5. Beat cream cheese and sugar until smooth and creamy.
  6. Add eggs one at a time, mixing on low speed.
  7. Blend in sour cream, vanilla, and flour until just combined.
  8. Pour batter over cooled crust.
  9. Place pan on a baking sheet.
  10. Bake 50–55 minutes, until edges are set but center jiggles slightly.
  11. Turn off oven, crack the door, and let cheesecake rest inside 1 hour.
  12. Chill at least 4 hours or overnight.
  13. Melt chocolate chips with oil until smooth.
  14. Pipe concentric circles on top of chilled cheesecake.
  15. Use a toothpick to drag lines outward from the center to create a web effect.
  16. Attach candy eyes to chocolate truffles with a dab of melted chocolate.
  17. Insert pretzel sticks as legs.
  18. Place spiders onto the cheesecake web.
