Spicy Mexican Corn Bites are a delicious and flavorful snack made with corn, cheese, and spices, perfect for any occasion.

- 3 cups corn kernels (fresh, canned, or frozen & thawed)
- ½ cup mayonnaise (or sour cream for tangier flavor)
- ½ cup Cotija cheese (or feta, finely crumbled)
- ½ cup shredded mozzarella (for binding)
- ½ cup breadcrumbs (panko or regular)
- 1 egg (lightly beaten)
- 1 tbsp lime juice
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp cayenne pepper (optional, for heat)
- Salt & black pepper, to taste
- 2 tbsp fresh cilantro, chopped (plus extra for garnish)
Instructions
- In a large bowl, mix together corn, mayonnaise, Cotija, mozzarella, breadcrumbs, egg, lime juice, and seasonings. Stir until well combined and sticky enough to shape.
- Using your hands or a small scoop, form mixture into golf ball-sized bites. Place on a lined baking sheet.
- Option A – Bake (healthier): Preheat oven to 400°F (200°C). Bake 18–20 minutes, turning once halfway, until golden brown.
- Option B – Pan-Fry (crispy): Heat oil in a skillet over medium heat. Fry corn bites until golden and slightly charred on all sides.
- Sprinkle with extra Cotija, chili powder/Tajín, and cilantro. Serve warm with lime wedges on the side.
Notes
- For a spicier version, increase the cayenne pepper.
- These bites can be made ahead of time and frozen before cooking.
- Serve with your favorite dipping sauce for added flavor.
