Description

Delicious and moist chocolate chip banana muffins made with ripe bananas and a hint of cinnamon.


Ingredients

Scale
  • 4 Tablespoon unsalted butter (melted and cooled slightly)
  • 1 egg (room temperature)
  • ½ teaspoon vanilla extract
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • ⅛ teaspoon cinnamon
  • ¾ cup mashed bananas (~2 medium) (extra ripe)
  • ½ cup chocolate chips

Instructions

  1. Preheat oven to 350°F and line 7-8 muffin tins with paper liners.
  2. In a medium mixing bowl, whisk together melted butter, egg, vanilla extract, and sugars.
  3. Add the flour, baking powder, baking soda, salt, and cinnamon and stir until just combined (the dough will seem dry here – don’t worry!).
  4. Fold in mashed bananas and chocolate chips just until incorporated (you don’t want to overmix).
  5. Fill muffin liners almost to the top. If desired, place several additional chocolate chips on top of the muffins.
  6. Bake for 20-22 minutes until edges are golden brown and centers bounce back when lightly touched.
  7. Remove from pan and let cool slightly before eating. Enjoy!

Notes

  • If you are using 9 muffin tins, fill them slightly less than full to avoid overflow.
