Delicious Salted Caramel Apple Cheesecake Crunch Bars with a graham cracker crust, creamy cheesecake layer, and topped with caramel and flaky sea salt.

- 2 cups graham cracker crumbs
- ½ cup all-purpose flour
- ½ cup brown sugar, packed
- 1 tsp cinnamon
- ½ tsp salt
- 1 cup unsalted butter, melted
- 16 oz (450g) cream cheese, softened
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 3 cups peeled & thinly sliced apples (Honeycrisp or Granny Smith)
- 2 tbsp brown sugar
- 1 ½ tsp cinnamon
- ¼ tsp nutmeg (optional)
- 1 tsp lemon juice
- Salted caramel sauce (store-bought or homemade)
- Pinch flaky sea salt (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 or 9×9 pan with parchment.
- In a bowl, combine graham crumbs, flour, brown sugar, cinnamon, and salt. Stir in melted butter until mixture resembles wet sand. Press ¾ of the mixture firmly into the bottom of the pan and save the remaining ¼ for the crumble topping.
- Beat cream cheese and sugar until smooth. Add egg and vanilla, mixing until creamy. Spread the cheesecake mixture over the crust.
- Toss sliced apples with brown sugar, cinnamon, nutmeg, and lemon juice. Spread apples evenly over the cheesecake.
- Sprinkle remaining crumble evenly across the apples.
- Bake for 45–50 minutes, or until the center is set. Cool completely and chill for at least 2 hours for clean slices (overnight is best).
- Slice into bars, then drizzle with salted caramel and a touch of sea salt.
Notes
- For best results, chill overnight before slicing.
- Use Honeycrisp or Granny Smith apples for the best flavor.
- Feel free to make your own salted caramel sauce for a homemade touch.
