- 1 lb chicken thighs, boneless and skinless
- 1 cup cornstarch
- 1/2 cup all-purpose flour
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon white pepper
- 1/2 teaspoon five-spice powder
- 1 egg, beaten
- 1/4 cup cold water
- Oil for frying
- Sliced green onions and fresh chili for garnish
Instructions
- Start by cutting the chicken thighs into bite-sized pieces, about 1-2 inches each. Pat them dry with paper towels to remove excess moisture.
- In a large mixing bowl, combine cornstarch, all-purpose flour, garlic powder, onion powder, salt, black pepper, white pepper, and five-spice powder. Mix well to create the seasoning mixture.
- In a separate bowl, whisk together the beaten egg and cold water until well combined.
- Dip each piece of chicken into the egg mixture, ensuring it’s fully coated, then roll it in the seasoning mixture, making sure each piece is well-covered. Shake off any excess flour.
- Heat oil in a deep frying pan or wok over medium-high heat until it reaches about 350°F (175°C). You can test the oil by dropping a small piece of batter in; it should sizzle and rise to the top.
- Carefully add the coated chicken pieces to the hot oil in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes, turning occasionally for even cooking.
- Once cooked, transfer the chicken to a plate lined with paper towels to drain excess oil.
- Garnish the crispy chicken with sliced green onions and fresh chili. Serve immediately with your favorite dipping sauce or over steamed rice.
