Description

A delicious roasted chicken glazed with orange, garlic, and herbs.


Ingredients

  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional)

Instructions

  1. Rinse the whole chicken under cold water and pat dry with paper towels. Season the inside and outside generously with salt and pepper.
  2. In a small bowl, mix together olive oil, minced garlic, chopped thyme, chopped rosemary, orange zest, orange juice, honey, soy sauce, and Dijon mustard.
  3. Brush the glaze all over the chicken, making sure to get into all the nooks and crannies.
  4. Place quartered onion in a roasting pan, surround it with the chicken and any extra glaze.
  5. Preheat oven to 425°F (220°C) and roast the chicken for about 1 hour and 20 minutes, basting every 20 minutes.
  6. Once done, remove the chicken from the oven and let it rest for about 10 minutes before carving.
