A delicious roasted chicken glazed with orange, garlic, and herbs.
Ingredients

- 1 whole chicken (about 4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1 small onion, quartered
- 1 cup chicken broth
- 2 tablespoons butter (optional)
Instructions
- Rinse the whole chicken under cold water and pat dry with paper towels. Season the inside and outside generously with salt and pepper.
- In a small bowl, mix together olive oil, minced garlic, chopped thyme, chopped rosemary, orange zest, orange juice, honey, soy sauce, and Dijon mustard.
- Brush the glaze all over the chicken, making sure to get into all the nooks and crannies.
- Place quartered onion in a roasting pan, surround it with the chicken and any extra glaze.
- Preheat oven to 425°F (220°C) and roast the chicken for about 1 hour and 20 minutes, basting every 20 minutes.
- Once done, remove the chicken from the oven and let it rest for about 10 minutes before carving.
