Ingredients

  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • 2 cups heavy whipping cream
  • 2 cups fresh raspberries
  • ½ cup raspberry jam (optional, warmed slightly for drizzling)
  • Shaved chocolate or cocoa powder (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Prepare red velvet cake according to package or recipe.
  2. Bake in a 9×13 pan or two round pans. Cool completely, then cut into cubes.
  3. Beat cream cheese, powdered sugar, and vanilla until smooth.
  4. In another bowl, whip heavy cream until stiff peaks form.
  5. Gently fold whipped cream into cream cheese mixture until fluffy.
  6. In a large trifle bowl, layer as follows: red velvet cake cubes, cream mixture, raspberries + drizzle of raspberry jam.
  7. Repeat layers until the bowl is filled, finishing with cream on top.
  8. Garnish with fresh raspberries, chocolate shavings, and mint leaves.
  9. Refrigerate at least 2 hours before serving for best flavor.
