- 1 box red velvet cake mix (plus ingredients listed on box)
- 8 oz cream cheese (softened)
- 1 cup powdered sugar
- 2 tsp vanilla extract
- 2 cups heavy whipping cream
- 2 cups fresh raspberries
- ½ cup raspberry jam (optional, warmed slightly for drizzling)
- Shaved chocolate or cocoa powder (for garnish)
- Fresh mint leaves (for garnish)
Instructions
- Prepare red velvet cake according to package or recipe.
- Bake in a 9×13 pan or two round pans. Cool completely, then cut into cubes.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- In another bowl, whip heavy cream until stiff peaks form.
- Gently fold whipped cream into cream cheese mixture until fluffy.
- In a large trifle bowl, layer as follows: red velvet cake cubes, cream mixture, raspberries + drizzle of raspberry jam.
- Repeat layers until the bowl is filled, finishing with cream on top.
- Garnish with fresh raspberries, chocolate shavings, and mint leaves.
- Refrigerate at least 2 hours before serving for best flavor.
