Raspberry Jelly Donut Muffins are a delightful treat that combines the flavors of a classic jelly donut with the convenience of a muffin.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • ¾ cup (150 g) granulated sugar
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp fine salt
  • 1 cup (240 ml) buttermilk (or milk + 1 tsp vinegar)
  • 2 large eggs
  • ½ cup (113 g) unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ cup raspberry jam (seedless preferred)
  • ½ cup powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk buttermilk, eggs, melted butter, and vanilla until smooth.
  4. Pour wet mixture into dry ingredients, stirring gently until just combined (do not overmix).
  5. Spoon 1 tablespoon of batter into each muffin cup. Add 1 teaspoon raspberry jam in the center, then cover with more batter until ¾ full.
  6. Bake for 18–20 minutes, or until muffins are golden and spring back lightly when touched. Cool slightly.
  7. Once muffins are warm (not hot), roll or sprinkle generously with powdered sugar.

Notes

  • For best results, use seedless raspberry jam.
  • Do not overmix the batter to ensure fluffy muffins.
  • These muffins are best enjoyed fresh but can be stored in an airtight container for a few days.
