Raspberry Jelly Donut Muffins are a delightful treat that combines the flavors of a classic jelly donut with the convenience of a muffin.

- 2 cups (250 g) all-purpose flour
- ¾ cup (150 g) granulated sugar
- 2 tsp baking powder
- ¼ tsp baking soda
- ½ tsp fine salt
- 1 cup (240 ml) buttermilk (or milk + 1 tsp vinegar)
- 2 large eggs
- ½ cup (113 g) unsalted butter, melted
- 1 tsp vanilla extract
- ½ cup raspberry jam (seedless preferred)
- ½ cup powdered sugar (for dusting)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, eggs, melted butter, and vanilla until smooth.
- Pour wet mixture into dry ingredients, stirring gently until just combined (do not overmix).
- Spoon 1 tablespoon of batter into each muffin cup. Add 1 teaspoon raspberry jam in the center, then cover with more batter until ¾ full.
- Bake for 18–20 minutes, or until muffins are golden and spring back lightly when touched. Cool slightly.
- Once muffins are warm (not hot), roll or sprinkle generously with powdered sugar.
Notes
- For best results, use seedless raspberry jam.
- Do not overmix the batter to ensure fluffy muffins.
- These muffins are best enjoyed fresh but can be stored in an airtight container for a few days.
