Raspberry Cream Cheese Bites are delightful pastries filled with a creamy mixture and fresh raspberries, perfect for a sweet treat.

- 3 cups (375 g) all-purpose flour
- ¼ cup (50 g) sugar
- 2 ¼ tsp (1 packet) instant yeast
- ½ tsp salt
- ¾ cup (180 ml) warm milk
- ¼ cup (60 g) unsalted butter, melted
- 1 large egg
- 200 g (7 oz) cream cheese, softened
- ½ cup (60 g) powdered sugar
- 1 tsp vanilla extract
- 2 tbsp heavy cream (optional, for extra silkiness)
- 1 ½ cups fresh raspberries
- Powdered sugar, for dusting
Instructions
- In a mixing bowl, whisk together flour, sugar, yeast, and salt.
- Add warm milk, melted butter, and egg. Mix into a soft dough.
- Knead for 8–10 minutes until smooth and elastic.
- Place in a greased bowl, cover, and let rise 1 hour, until doubled in size.
- Beat cream cheese, powdered sugar, and vanilla until smooth. If you prefer a lighter filling, beat in heavy cream. Chill until ready to use.
- Punch down dough and divide into 12–14 pieces. Shape into smooth balls and place on a lined baking tray.
- Cover and let rise 30 minutes.
- Preheat oven to 350°F (175°C).
- Bake 15–18 minutes, until golden brown. Cool slightly on a wire rack.
- Slice buns in half horizontally (like sliders). Spread or pipe cream cheese filling inside. Add fresh raspberries. Close the buns and dust with powdered sugar.
Notes
- For a richer filling, use heavy cream in the cream cheese mixture.
- Ensure the dough rises in a warm place for best results.
- These bites are best served fresh but can be stored in an airtight container for a couple of days.
