Description

Raspberry Cream Cheese Bites are delightful pastries filled with a creamy mixture and fresh raspberries, perfect for a sweet treat.


Ingredients

  • 3 cups (375 g) all-purpose flour
  • ¼ cup (50 g) sugar
  • 2 ¼ tsp (1 packet) instant yeast
  • ½ tsp salt
  • ¾ cup (180 ml) warm milk
  • ¼ cup (60 g) unsalted butter, melted
  • 1 large egg
  • 200 g (7 oz) cream cheese, softened
  • ½ cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream (optional, for extra silkiness)
  • 1 ½ cups fresh raspberries
  • Powdered sugar, for dusting

Instructions

  1. In a mixing bowl, whisk together flour, sugar, yeast, and salt.
  2. Add warm milk, melted butter, and egg. Mix into a soft dough.
  3. Knead for 8–10 minutes until smooth and elastic.
  4. Place in a greased bowl, cover, and let rise 1 hour, until doubled in size.
  5. Beat cream cheese, powdered sugar, and vanilla until smooth. If you prefer a lighter filling, beat in heavy cream. Chill until ready to use.
  6. Punch down dough and divide into 12–14 pieces. Shape into smooth balls and place on a lined baking tray.
  7. Cover and let rise 30 minutes.
  8. Preheat oven to 350°F (175°C).
  9. Bake 15–18 minutes, until golden brown. Cool slightly on a wire rack.
  10. Slice buns in half horizontally (like sliders). Spread or pipe cream cheese filling inside. Add fresh raspberries. Close the buns and dust with powdered sugar.

  • For a richer filling, use heavy cream in the cream cheese mixture.
  • Ensure the dough rises in a warm place for best results.
  • These bites are best served fresh but can be stored in an airtight container for a couple of days.
