- 6 small apples (Granny Smith or Honeycrisp)
- 6 wooden sticks or skewers
- Hot water for cleaning (to remove wax)
- 2 cups (400 g) granulated sugar
- ¾ cup (180 ml) water
- ½ cup (120 ml) light corn syrup
- Candy thermometer
- Gel food coloring: pink, blue, yellow, and purple
- ½ tsp vanilla extract (optional)
Instructions
- Wash apples in hot water to remove any wax coating; dry completely.
- Insert sticks securely and set aside on parchment paper.
- In a heavy-bottomed saucepan, combine sugar, water, and corn syrup.
- Bring to a boil over medium-high heat without stirring.
- Continue cooking until mixture reaches 300°F (150°C) (hard crack stage).
- Once it reaches temperature, remove from heat and stir in vanilla extract.
- Divide the hot candy syrup evenly into 4 small bowls.
- Tint each bowl with one gel color: pink, blue, yellow, and purple.
- Working quickly, drizzle small amounts of each color into a single bowl — don’t mix, just let the colors naturally swirl.
- Dip each apple gently, twisting as you lift to create marbled rainbow patterns.
- Place dipped apples on a greased or parchment-lined tray to set for 20–30 minutes.
- Once hardened, they’ll have that high-gloss, rainbow-glass finish.
Notes
- Ensure apples are completely dry before dipping to help the candy coating adhere.
- Work quickly when swirling the colors to prevent the candy from hardening.
