- 6 medium apples (Granny Smith, Honeycrisp, or Fuji work best)
- 6 wooden sticks/skewers
- 2 cups granulated sugar
- ½ cup light corn syrup
- ¾ cup water
- ½ tsp gel food coloring (in rainbow shades: red, orange, yellow, green, blue, purple)
- 1 tsp vanilla extract (optional)
- Candy thermometer
Instructions
- Wash and dry apples thoroughly. Remove stems and insert wooden sticks into the tops.
- Place apples on a parchment-lined baking sheet.
- In a saucepan, combine sugar, corn syrup, and water.
- Bring to a boil over medium-high heat, stirring until sugar dissolves.
- Attach a candy thermometer and cook until mixture reaches 300°F (hard crack stage).
- Remove from heat and stir in vanilla extract if using.
- Divide hot candy syrup into small heatproof bowls.
- Tint each with a different gel food coloring.
- Working quickly, drizzle small amounts of each color into a single dipping bowl to create a rainbow swirl effect.
- Holding the stick, dip each apple into the rainbow mixture, twisting slightly to coat evenly.
- Allow excess candy to drip off.
- Place apples on the prepared parchment paper to harden.
- Let apples cool completely until candy shell is firm and glossy.
- Serve within 1–2 days for the best crunch.
