Instructions
- Wash apples thoroughly to remove wax (dip briefly in boiling water, then dry well).
- Insert wooden sticks firmly into the tops.
- Line a tray with parchment paper and lightly grease.
- In a saucepan, combine sugar, corn syrup, and water.
- Bring to a boil over medium heat. Do not stir—just swirl the pan occasionally.
- Cook until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
- Remove from heat and stir in vanilla (if using).
- Divide candy mixture into small heatproof bowls. Tint each with a few drops of different gel food colors.
- Quickly drizzle colors back into one bowl (layering them without fully mixing to create swirls).
- Dip apples one at a time, twirling to coat evenly.
- Place on parchment to harden.
