A refreshing and easy No-Bake Mango Cheesecake that is perfect for any occasion.

- 200 g (about 2 cups) digestive biscuits or graham crackers
- 100 g (7 tbsp) unsalted butter, melted
- 400 g (14 oz) cream cheese, softened
- 200 ml (¾ cup + 1 tbsp) heavy whipping cream, chilled
- 120 g (½ cup) granulated sugar
- 200 g (7 oz) mango purée (fresh or canned, smooth)
- 1 tbsp lemon juice
- 10 g (1 tbsp) gelatin (or 3 tsp agar-agar for vegetarian option)
- 3 tbsp hot water (to dissolve gelatin)
- 200 g (7 oz) mango purée (for topping)
- 2 tsp gelatin (or agar-agar) dissolved in 2 tbsp hot water
- Fresh mango cubes (for garnish)
Instructions
- Prepare the Crust: Crush the biscuits into fine crumbs using a food processor (or place them in a bag and crush with a rolling pin). Mix with melted butter until evenly coated. Press the mixture firmly into the bottom of a springform pan (8-inch/20 cm). Chill in the fridge for 20 minutes to set.
- Make the Cheesecake Filling: In a small bowl, dissolve gelatin in hot water. Let cool slightly. In a mixing bowl, beat cream cheese and sugar until smooth and creamy. Add mango purée and lemon juice, mix until combined. Stir in the dissolved gelatin. Whip the heavy cream until soft peaks form, then gently fold into the mango-cream cheese mixture. Pour the filling over the chilled crust, smoothing the top. Refrigerate for at least 4 hours, or until set.
- Prepare the Mango Topping: Dissolve gelatin in hot water, let cool slightly. Mix with mango purée until smooth. Pour gently over the set cheesecake layer. Chill for another 2 hours until topping is firm.
- Garnish and Serve: Before serving, top with fresh mango cubes. Slice and enjoy chilled!
