Description

A vibrant and colorful cheesecake layered with various berry flavors, perfect for any celebration.


Ingredients

Scale
  • 2 cups graham cracker crumbs (or digestive biscuits, crushed)
  • ½ cup unsalted butter, melted
  • 2 tbsp sugar
  • 4 packs (8 oz each) cream cheese, softened
  • 1 ¼ cups granulated sugar
  • 1 cup sour cream
  • 4 large eggs
  • 2 tsp vanilla extract
  • Food coloring (gel preferred: purple, blue, yellow, pink, etc.)
  • 1 cup mixed berries (raspberries, blueberries, or cherries)
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Fresh berries (raspberries, blueberries, strawberries)
  • Colorful sprinkles & candy pearls

Instructions

  1. Preheat oven to 325°F (160°C). Grease and line a 9-inch springform pan.
  2. Mix graham crumbs, melted butter, and sugar until combined. Press mixture firmly into the bottom of the pan. Bake for 10 minutes. Cool.
  3. Beat cream cheese and sugar until smooth. Add sour cream and vanilla. Mix well. Add eggs one at a time, mixing on low speed (do not overbeat). Divide batter into 4–5 bowls. Tint each with a different food coloring.
  4. Pour the purple batter first, spreading evenly. Add some mixed berries into the purple layer. Continue with blue, yellow, pink, and finish with another colored layer. Use a spatula to smooth the top.
  5. Place springform pan in a larger baking dish. Pour hot water into the outer dish (water bath). Bake 60–70 minutes, until center is almost set but still slightly wobbly. Turn off oven, crack door open, and let cheesecake cool inside for 1 hour. Chill at least 4 hours or overnight.
  6. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Pipe swirls on top of the cheesecake. Garnish with fresh berries, sprinkles, and candy pearls.

Notes

  • For best results, use room temperature cream cheese.
  • Feel free to customize the colors and flavors of the layers.
  • Make sure to chill the cheesecake thoroughly for the best texture.
