Description

These adorable Pumpkin Patch Parfait Cups are the perfect no-bake Halloween or fall dessert! Layered with spiced pumpkin mousse, creamy cheesecake filling, and buttery cookie crumbs — they’re as festive as they are delicious.


Ingredients

  • 1 ½ cups (150 g) crushed graham crackers or Biscoff cookies
  • ¼ cup (55 g) melted unsalted butter
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (120 ml) heavy cream
  • ¼ cup (50 g) granulated sugar
  • 1 tsp vanilla extract
  • 1 cup (240 ml) pumpkin puree
  • ½ cup (120 ml) heavy cream
  • ¼ cup (50 g) brown sugar
  • ½ tsp pumpkin pie spice
  • ½ tsp vanilla extract
  • Mini Oreos or chocolate cookies
  • Edible mini pumpkins and ghosts (or candy corn, optional)
  • Crumble cookies for topping

Instructions

  1. Mix graham cracker crumbs, melted butter, brown sugar, and cinnamon until combined. Press lightly into the bottom of serving glasses. Reserve some crumbs for the top layer.
  2. In a bowl, beat cream cheese, sugar, and vanilla until smooth. Add heavy cream and whip until light and fluffy. Spoon or pipe a layer over the crumbs.
  3. In another bowl, whisk pumpkin puree, brown sugar, pumpkin spice, and vanilla. In a separate bowl, whip heavy cream to soft peaks and fold it gently into the pumpkin mixture. Add a layer of this mousse on top of the cheesecake cream.
  4. Repeat the layers: crumbs → cheesecake → pumpkin mousse. Finish with a swirl of pumpkin mousse and sprinkle of reserved crumbs.
  5. Top each cup with mini Oreos, pumpkin candies, and ghost toppers for a playful Halloween touch.
