Description

Pumpkin Bread Truffles are a must-try seasonal treat that combines the flavors of pumpkin bread with a creamy truffle filling, coated in colorful candy melts.

Ingredients

Scale
  • 1 ½ cups (190 g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • ½ cup (120 ml) vegetable oil
  • 2 large eggs
  • 1 cup (225 g) pumpkin purée (not pie filling)
  • 1 tsp vanilla extract
  • 2 cups crumbled pumpkin bread (about ½ loaf)
  • 4 oz (115 g) cream cheese, softened
  • 2 cups orange candy melts (or white chocolate + orange food coloring)
  • ½ cup green candy melts (or white chocolate + green coloring)
  • Toothpicks or dipping tool
  • Mini cupcake liners (optional for serving)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, mix sugars, oil, eggs, pumpkin purée, and vanilla.
  4. Add dry ingredients to wet, stir until just combined.
  5. Pour into loaf pan and bake 50–55 minutes, until a toothpick comes out clean.
  6. Cool completely before using.
  7. Crumble the cooled pumpkin bread into fine crumbs.
  8. Mix with softened cream cheese until a dough-like consistency forms.
  9. Roll mixture into small balls (about 1 inch in diameter).
  10. Place on a lined tray and chill for at least 30 minutes.
  11. Melt orange candy melts according to package instructions.
  12. Dip chilled pumpkin bread balls into melted coating, shaking off excess.
  13. Place onto parchment paper to set.
  14. Melt green candy melts and pipe vines, stems, and details on top of each truffle.
  15. Let set completely before serving.

Notes

  • For a quicker option, use store-bought pumpkin bread.
  • Ensure the pumpkin bread is completely cooled before crumbling.
  • Chilling the truffles helps the coating to set better.
