Pumpkin Bread Truffles are a must-try seasonal treat that combines the flavors of pumpkin bread with a creamy truffle filling, coated in colorful candy melts.

- 1 ½ cups (190 g) all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp ginger
- ½ cup (100 g) granulated sugar
- ½ cup (100 g) brown sugar
- ½ cup (120 ml) vegetable oil
- 2 large eggs
- 1 cup (225 g) pumpkin purée (not pie filling)
- 1 tsp vanilla extract
- 2 cups crumbled pumpkin bread (about ½ loaf)
- 4 oz (115 g) cream cheese, softened
- 2 cups orange candy melts (or white chocolate + orange food coloring)
- ½ cup green candy melts (or white chocolate + green coloring)
- Toothpicks or dipping tool
- Mini cupcake liners (optional for serving)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
- In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.
- In another bowl, mix sugars, oil, eggs, pumpkin purée, and vanilla.
- Add dry ingredients to wet, stir until just combined.
- Pour into loaf pan and bake 50–55 minutes, until a toothpick comes out clean.
- Cool completely before using.
- Crumble the cooled pumpkin bread into fine crumbs.
- Mix with softened cream cheese until a dough-like consistency forms.
- Roll mixture into small balls (about 1 inch in diameter).
- Place on a lined tray and chill for at least 30 minutes.
- Melt orange candy melts according to package instructions.
- Dip chilled pumpkin bread balls into melted coating, shaking off excess.
- Place onto parchment paper to set.
- Melt green candy melts and pipe vines, stems, and details on top of each truffle.
- Let set completely before serving.

- For a quicker option, use store-bought pumpkin bread.
- Ensure the pumpkin bread is completely cooled before crumbling.
- Chilling the truffles helps the coating to set better.
