These no-bake Pink Velvet Cheesecake Squares are a creamy, fluffy delight with a buttery cookie crust and a pastel pink hue perfect for Valentine’s Day or any celebration. The combination of smooth cheesecake filling and crunchy crust makes them irresistible!

  • A few drops of pink food coloring
  • 1 tsp lemon juice (to balance sweetness)
  • 100 ml whipped cream (sweetened)
  • Pink sprinkles or heart-shaped decorations
  • White chocolate shavings (optional)

Instructions

  1. Prepare the Crust: Crush the cookies finely in a food processor. Mix with melted butter and sugar until it resembles wet sand. Press firmly into the base of an 8×8-inch (20×20 cm) pan lined with parchment paper. Chill in the fridge for 15–20 minutes to set.
  2. Make the Cheesecake Layer: In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Add lemon juice and pink food coloring. Adjust the color intensity to your liking. In another bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and airy. Pour over the chilled crust and smooth the top. Refrigerate for at least 4 hours, or overnight, until firm.
  3. Add the Topping: Once set, spread or pipe whipped cream on top. Decorate with pink sprinkles, candy hearts, or chocolate shavings.
  4. Slice & Serve: Carefully lift from the pan and cut into neat squares. Serve chilled and enjoy the creamy, velvet texture with every bite!
