Description

A delightful and refreshing Pink Lemonade Pop Rocks Ice Cream that combines the tangy flavor of lemonade with the fun crunch of Pop Rocks candy.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • ½ cup fresh lemon juice (strained)
  • A few drops of pink food coloring (optional, for brightness)
  • 1 packet Pop Rocks candy (strawberry, watermelon, or tropical flavors)
  • 2 tbsp rainbow sprinkles (optional, for extra fun)

Instructions

  1. In a bowl, whisk together cream, milk, sugar, vanilla, lemon zest, and lemon juice until sugar dissolves.
  2. Chill the mixture in the refrigerator for at least 2 hours (or overnight) for best flavor.
  3. Pour the chilled base into an ice cream maker and churn until soft-serve consistency (20–25 minutes).
  4. Add pink food coloring during the last few minutes to create that lemonade glow.
  5. Transfer churned ice cream into a loaf pan or freezer container.
  6. Gently fold in rainbow sprinkles (if using).
  7. Cover and freeze for 4–6 hours until firm.
  8. Scoop ice cream into cones or bowls.
  9. Just before serving, sprinkle with Pop Rocks so they crackle and pop as you eat.

Notes

  • For a more intense lemon flavor, increase the amount of lemon juice.
