Description
A delightful and refreshing Pink Lemonade Pop Rocks Ice Cream that combines the tangy flavor of lemonade with the fun crunch of Pop Rocks candy.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- Zest of 1 lemon
- ½ cup fresh lemon juice (strained)
- A few drops of pink food coloring (optional, for brightness)
- 1 packet Pop Rocks candy (strawberry, watermelon, or tropical flavors)
- 2 tbsp rainbow sprinkles (optional, for extra fun)
Instructions
- In a bowl, whisk together cream, milk, sugar, vanilla, lemon zest, and lemon juice until sugar dissolves.
- Chill the mixture in the refrigerator for at least 2 hours (or overnight) for best flavor.
- Pour the chilled base into an ice cream maker and churn until soft-serve consistency (20–25 minutes).
- Add pink food coloring during the last few minutes to create that lemonade glow.
- Transfer churned ice cream into a loaf pan or freezer container.
- Gently fold in rainbow sprinkles (if using).
- Cover and freeze for 4–6 hours until firm.
- Scoop ice cream into cones or bowls.
- Just before serving, sprinkle with Pop Rocks so they crackle and pop as you eat.
Notes
- For a more intense lemon flavor, increase the amount of lemon juice.
- Make sure to use fresh lemon juice for the best taste.
- Pop Rocks should be added just before serving to maintain their fizz.
