Ingredients

  • 1 ½ cups (150 g) graham cracker crumbs (or digestive biscuits)
  • ¼ cup (50 g) granulated sugar
  • ½ cup (115 g) unsalted butter, melted
  • 1 can (20 oz / 560 g) crushed pineapple, drained (reserve juice)
  • ½ cup (100 g) granulated sugar
  • 2 large eggs
  • 1 tbsp lemon juice
  • 2 tbsp reserved pineapple juice
  • ¼ cup (30 g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 175°C (350°F).
  2. Mix graham cracker crumbs, sugar, and melted butter until sandy.
  3. Press firmly into the bottom of a lined 9×9 inch (23×23 cm) baking pan.
  4. Bake for 8 minutes, then set aside.
  5. In a bowl, whisk eggs, sugar, lemon juice, and pineapple juice.
  6. Add flour, baking powder, and salt, mixing until smooth.
  7. Stir in drained crushed pineapple.
  8. Pour pineapple mixture over crust.
  9. Bake 30–35 minutes, until set and lightly golden on top.
  10. Cool completely in the pan.
  11. Dust with powdered sugar before cutting into squares.
  12. Enjoy chilled or at room temperature.
