- 1 ½ cups (150 g) graham cracker crumbs (or digestive biscuits)
- ¼ cup (50 g) granulated sugar
- ½ cup (115 g) unsalted butter, melted
- 1 can (20 oz / 560 g) crushed pineapple, drained (reserve juice)
- ½ cup (100 g) granulated sugar
- 2 large eggs
- 1 tbsp lemon juice
- 2 tbsp reserved pineapple juice
- ¼ cup (30 g) all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- Powdered sugar, for dusting
Instructions
- Preheat oven to 175°C (350°F).
- Mix graham cracker crumbs, sugar, and melted butter until sandy.
- Press firmly into the bottom of a lined 9×9 inch (23×23 cm) baking pan.
- Bake for 8 minutes, then set aside.
- In a bowl, whisk eggs, sugar, lemon juice, and pineapple juice.
- Add flour, baking powder, and salt, mixing until smooth.
- Stir in drained crushed pineapple.
- Pour pineapple mixture over crust.
- Bake 30–35 minutes, until set and lightly golden on top.
- Cool completely in the pan.
- Dust with powdered sugar before cutting into squares.
- Enjoy chilled or at room temperature.

- Ensure the pineapple is well-drained to avoid a soggy crust.
- These bars can be stored in the refrigerator for up to a week.
- For a tropical twist, consider adding shredded coconut to the pineapple layer.
