A delightful and refreshing dessert that combines the tropical flavors of pineapple with a citrusy twist, topped with a crunchy crumble.

- 2 cups graham cracker crumbs (or digestive biscuits, crushed)
- ½ cup unsalted butter, melted
- ¼ cup brown sugar
- ½ cup flour
- ½ cup rolled oats
- ¼ cup cold butter, cubed
- ¼ cup sugar
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¾ cup buttermilk
- 2 cups pineapple chunks (fresh or canned, drained)
- 1 tbsp lemon zest
- 1 cup whipped cream or stabilized frosting
- ½ cup cream cheese, softened (optional, for frosting base)
- 2 tbsp honey or pineapple syrup (optional, for drizzle)
- Fresh parsley or mint (for garnish, optional)
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham crumbs, melted butter, and brown sugar until combined. Press into bottom of a springform pan. Bake 8–10 minutes. Cool.
- In a bowl, combine flour, oats, sugar, and cubed butter. Rub mixture with fingers until crumbly. Chill until ready to use.
- In a bowl, whisk flour, baking powder, baking soda, and salt. In another bowl, cream butter and sugar until fluffy. Beat in eggs and vanilla. Alternate adding dry mixture and buttermilk. Divide batter into two greased 8-inch cake pans. Bake 20–25 minutes until golden and set. Cool completely.
- Mix pineapple chunks with lemon zest. Chill until use.
- Place crust base on serving platter. Add a layer of cake, spread whipped cream or cream cheese frosting, and scatter pineapple chunks. Repeat with second cake layer, more cream, and pineapple. Top with crumble mixture (lightly toasted in oven if desired). Garnish with whipped cream swirls, pineapple chunks, and parsley/mint. Drizzle honey or pineapple syrup before serving.
Notes
- For a gluten-free version, use gluten-free graham crackers and flour.
- Make sure to drain canned pineapple well to avoid excess moisture.
- Chilling the filling helps to keep the layers from sliding apart.
