- 1 box (3.4 oz / 96 g) instant vanilla pudding mix
- 1 can (20 oz / 565 g) crushed pineapple (with juice, undrained)
- 1 cup shredded coconut (sweetened or unsweetened)
- 1 ½ cups mini marshmallows
- ½ cup chopped maraschino cherries (plus a few whole for garnish)
- 8 oz (225 g) whipped topping (or freshly whipped cream)
- Optional: ½ cup chopped pecans or macadamia nuts
Instructions
- In a large mixing bowl, combine the pudding mix and crushed pineapple with juice. Stir until pudding powder is fully dissolved and mixture thickens slightly.
- Fold in shredded coconut, marshmallows, and chopped cherries. Add nuts if using.
- Gently fold in whipped topping until creamy and well combined.
- Refrigerate at least 1 hour before serving to let flavors blend. Top with extra cherries, pineapple chunks, and a sprinkle of coconut.
Notes
- For a richer flavor, use sweetened shredded coconut.
- This dessert can be made a day in advance for better flavor blending.
